Coriander Lime Chicken with Strawberry Salsa

Coriander Lime Chicken with Strawberry Salsa is the perfect dish for the summer. This light and refreshing strawberry and jalapeno salsa with coriander marinated grilled chicken only takes 25 minutes to make and tastes amazing.

Ingredients

For the chicken

1 1/2 chicken breasts

1 tbsp honey

2 tbsp lime juice

2 tbsp olive oil

1/4 cup coriander, chopped

1 tsp lime zest,

Salt & pepper

For the salsa

1 cup tomatoes, chopped

1 cup strawberries, chopped

5 green onions, chopped

1 jalapeno, chopped

1 cup coriander, chopped

2 tbsp lime juice

Salt & Pepper

Method

1. In a blender add olive oil, honey, coriander, lime zest, salt and pepper. Blend for 30 seconds until smooth.

2. Wrap your chicken breasts in plastic wrap and pound until the chicken is 1/2 inch in thickness. Put your chicken in a large bowl and pour your coriander marinade over the chicken. Marinate for roughly 20 minutes, whilst you heat up the grill and make the salsa.

3. For the strawberry salsa, mix all of the salsa ingredients together in a bowl. Then cover and refrigerate until the chicken is ready to serve. Grill the chicken on both sides.

4. Spoon the salsa over the grilled chicken and serve.
