If you love a chilli con carne, then you'll love this rich and flavourful South American Stew. You can have it on the table in just 30 minutes and with it being under 300 calories per serve, it is perfect midweek healthy meal.
2 red onions, 1 chopped, 1 sliced into rings
A pinch of chilli powder
coriander a small bunch, leaves picked
cooked rice to serve
lime wedges to serve
2 garlic cloves, crushed
400g chopped tomatoes
500ml chicken stock
1/4 block Willie's Mexican mole cacao
1. Cook the onion and garlic in 1tbsp olive oil. Add the chicken and cook for 2 minutes, stir in the tomatoes and stock and simmer. Add the mole cacao and chilli and cook for 30 minutes.
2. Stir in half the coriander and serve with onion rings, lime wedges and rice.
